LEEKS

Allium porrum, belong to the same family as onions and garlic. It was used by the ancient Egyptians, Greeks and Romans and spread to the rest of Europe with their empires.

Leeks have a long cylinder with tightly fitting green leaves on top and white under the ground, which is the part used most in cooking. They have a milder taste than onions and are used a lot in hot and cold soups and raw in salads.

The winter variety, which is harvested by springtime, is for the year following that in which it is planted and the summer variety is for quick harvesting and use.
